Tequila 'Sierra is a special drink made from overripe, literally juicy blue agave fruits grown in the state of Jalisco, near its capital Guadalajara, at an altitude of 1500 metres above sea level. The agave fields are tended by generations of professionals who take care of the entire process, from planting to harvesting. The agave is cooked for 12 hours at high pressure and another 12 hours at low temperature, after which the juice is gently squeezed. The resulting agave liquid is distilled twice in large copper stills to produce a high-alcohol spirit, which is diluted with pure, repeatedly purified spring water. The tequila is then bottled or put in barrels for further ageing
