Sierra Tequila is a special drink made from overripe, literally juicy, blue agave fruits grown in the state of Jalisco, near its capital, Guadalajara, at an altitude of 1500 metres above sea level. The agave fields are tended by generations of professionals who take care of the entire process, from planting to harvesting. The agave is cooked at high pressure for 12 hours and at low temperature for another 12 hours, after which the juice is gently squeezed. The resulting agave liquid is distilled twice in large copper stills to produce a high-alcohol spirit, which is diluted with pure, repeatedly purified spring water. The tequila is then bottled or put in barrels for further ageing.
Destileria Sierra is located in a historic fazenda in Guadalajara, the capital of the Tequila region.
